

The Amarone Riserva was created to reflect the Valpolicella without forcing a wine with either techniques or time. The grapes for the Amarone Riserva have been selected from our best vineyards. This selection of grapes from the Valpolicella Classica and the Valpolicella DOC area to the East of Verona aims to bring out the full potential of the Valpolicella. The grapes are dried in fruit drying lofts that are influenced by the outside weather conditions so that the climate can also leave its mark on the grapes in this process. The Amarone Riserva has balanced powerful fruit and the elegance that only wines can obtain once they have been left to age to develop complex tertiary aromas

Grapes are selected in the vineyard and are placed in crates to be then left to dry in the fruit drying loft. During the fermentation process, the must is left in contact with the grape skins so that the colour is extracted from the fruit. Pumping over is carried out twice a day and delestage is carried out half way through the fermentation process.
